As an extension/research assistant, a major program responsibility is providing technical information and industry services to North Carolina seafood processing firms on important economic, safety and quality issues. This may involve but is not limited to sourcing of information; problem solving; and, conducting applied research studies. These responsibilities involve working with others in delivery of consumer and industry-based scientific programs for improving the knowledge base and well being of North Carolina citizens. It may include overnight travel for work with industry and participation in regional and national fishery and food technology meetings in order to interact with other professionals working in the field. As an extension/research assistant, a primary responsibility is conducing applied research studies designed to answer specified industry problems or applied research needs. Part of this responsibility includes developing adequate protocols for various analyses, performing routine microbiological and physicochemical analyses, keeping accurate and timely records, and ordering supplies when necessary to carry out specific projects. The drafting of lab reports for use in industry reports and publications is expected as part of the research component of this position. This position is responsible for safely maintaining and operating analytical laboratory and pilot processing equipment including the walk-in cooler and freezer in the pilot-processing laboratory. The person is expected to update and maintain the laboratory safety plan. This position also provides technical assistance to others including students in performing routine analyses or the operation of pilot processing equipment.
